Z: Zucchini (And the end of the Healthy Alphabet)

Zucchini is more versatile than you think.

It’s not only for zucchini bread or grilling on the BBQ. Both…delicious ways to eat this summer squash but my favourite way?

Make it into noodles and eat it raw! Don’t knock it til you’ve tried it. Honestly, go out and get yourself a spiralizer. And then you can send me a thank you note.

Looking for a great peanut sauce recipe? Here’s one!

  • 1/4 cup all natural peanut butter (smooth or chunky works)
  • 1/4 cup vegetable broth
  • 2 tbsp. rice vinegar
  • 1 tsp sesame oil
  • juice from one lime
  • 1 tsp soy sauce
  • 1 tsp maple syrup (trust me)
  • 1 tsp sriracha (or to taste)

Mix it all together and TADA! Toss with spiralized vegetables and top with crushed nuts or seeds. Makes a great meal or side dish.

Zucchini is full of vitamins, minerals and fibre for very little calories. It’s a powerhouse veggie full of water, vitamin C, B6 and more potassium than you can shake a stick at…if you were to shake sticks at that sort of thing.

Also…protein! Yes. Zucchini contains protein.

I made this dish a while ago-I’m not going to give you measurements because I seriously just threw it together…but here is what went in to this awesome zucchini dish:

  • 20150415_115934Whole wheat couscous
  • diced onion
  • garlic
  • 1 whole zucchini, chopped
  • cherry tomatoes, chopped
  • salt and pepper

You can add your own awesomeness. The more, the better.
