Red Quinoa Salad
Quinoa used to be so trendy and now it’s a staple in everyone’s kitchen. Am I right? Everyone is so “over” quinoa. But don’t stop eating it!
It’s amazing! Quinoa is full of protein, fibre, iron, vitamins…I could go on…but let me tell you this:
Quinoa is a COMPLETE PROTEIN. This means it contains all nine essential amino acids that our body can’t make-the ones you NEED TO GET FROM FOOD.
So having a quinoa salad for lunch means, you don’t need to add any other protein, it will fill you up and your body will be jumping for joy (and so will you because you’ll be so full of energy!).
Also, it’s fun to say. And you look like a health superstar when you eat it. Make sure you check your teeth…those little suckers can really get in there.
I’m going to share with you my family’s TRIED AND TRUE red quinoa salad recipe. Not only do we all love this recipe, but it’s a showstopper at a party. The star at a BBQ. The bowl is always empty at the end of the night, and that makes me happy. I love to feed!

- 4 cups red quinoa, cooked
- 1 cup dried cranberries (preferable sweetened with fruit juice)
- 1 cup raw pecans, chopped
- 4-5 green onions, chopped
- 1/4 cup extra virgin olive oil
- 1/4 cup balsamic vinegar
- 1/4 cup REAL maple syrup
- salt and pepper to taste
In a large bowl, add cooled quinoa, dried cranberries, chopped pecans and green onions.
In another bowl, whisk together oil, vinegar and maple syrup. Toss with quinoa mix and add salt and pepper to taste.
You can eat this right away or leave covered in the fridge until you need it…it only gets better and better the longer you leave it (up to a week).
Switch-ups: I love to use dried barberries instead of cranberries. They contain no sugar and add an amazing tart bite to this salad. You can find them in most bulk food stores.
If you want a dramatic looking salad, go for black quinoa. It cooks the same way, has the same amazing properties but looks super cool!
