Cauliflower and Kohlrabi Soup
I love a good soup. If you’ve been on this website before, you probably know thanks to all the soup recipes like this Tomato and Lentil Soup, Cream of Cauliflower, Butternut Squash Soup, Kabocha Kale Sesame Soup, and more.
I’m a soup lover.
So it’s no surprise when I see a bunch of vegetables in the fridge, I automatically think: “What soup could I make with this?”
Kohlrabi is a delicious and fresh vegetable that I’ve been receiving in my CSA (Community Supported Agriculture) basket a lot. It’s a hearty tuberous vegetable from the brassica family, so related to broccoli, cabbage, cauliflower, etc. Although I find the taste quite mild, it tends to have an earthiness to it that is acquired.
You can bake it, roast it, fry it, steam it, mash it, or even eat it raw, but now I have a favourite. Blend it into soup!
This recipe is super easy. Keep the ingredients as white as possible for a really creamy looking soup. If you overcook the onions and they go brown, just remember-so will your soup.
Combining cauliflower and kohlrabi in this soup makes it not only delicious, but incredibly good for your body. Brassica vegetables contain prebiotics which are immensely important for gut health. We’ve all heard about PRObiotics, but what are PREbiotics? Well…the probiotic bacteria has to feed on something…and that’s what the prebiotics are…food…for the probiotic bacteria!

The reason I love this soup right now is as the weather gets cooler and we all start hanging around indoors more, that’s when the germ start spreading. Ok, scratch that…no one escapes GERM-FREE…but you’ll probably avoid a cold or two!
