Blueberry Muffin Smoothie a.k.a. The Cement Mixer

It was a rainy day in Toronto, when I was craving something sweet and bright for my breakfast.

BLUEBERRY MUFFINS!

And then I thought about everything I had to do that day…and thought…SMOOTHIE!

And that’s when the sun peaked through the clouds and said “Combine them!”.

Ok, the sun actually didn’t peak through the clouds, in fact, I think it started raining even harder, but I still thought it would be a great idea to make a smoothie reminiscent of a blueberry muffin.

The thing is, I REALLY enjoy having spinach in my smoothies because it adds extra vitamins, fibre, and iron…so I knew my smoothie wouldn’t be the prettiest colour. That’s why I nicknamed this one “The Cement Mixer”.

Although HIGHLY appropriate for such a rainy day. If you held it up to the sky, it would blend right into the grey clouds.

This smoothie is slightly sweet, has that delicious hint of oats, and the bright flavour of blueberry and lemon.

I mean, YUM.

Maybe I should’ve called this a blueberry PIE smoothie…hmmm.

Although all this talk of baking has inspired me. Don’t be surprised if my next recipe comes out of the oven.

Needless to say, don’t judge a smoothie by its colour. The most delicious smoothies typically fall into “Cement Mixer” categories. Mixing any sort of berry with the bright green from spinach leaves is a nasty rainbow combination. Just close your eyes and imagine it’s purple. Or pink, or whatever you want. Or put it in an opaque container so you don’t have to look at it. Whatever you do, don’t miss out!

Sometimes a rainy day will throw you off track from your nutrition goals. Sometimes when it’s really cold and grey outside, I just want to curl up on the couch with a bowl of mashed potatoes. But if you make this smoothie, you’ll have the best of both worlds. The comfort of a baked blueberry muffin, and the awesome nutrients and antioxidants from blueberries! Plus the oats will fill you up so you son’t be craving those mashed potatoes all day.

  1. Place all ingredients in a blender and whirr until smooth.
Recipe Notes

I find cashew milk adds a nice creaminess to this smoothie, but you can use any milk you have on hand.

Kefir is a fermented milk product that contains probiotics. You can find it at most grocery stores.
