I realize it’s not QUITE Fall but the world is gearing up for it and so am I.

School is in full swing and we’re starting to see our breathe in the air. The mornings have the smell of crispy leaves and people are starting to wear jeans and boots…and sweaters! (Yay!)

There are only two things I like about the start of Fall, okay, many things…but two in particular. One is jeans and two is pumpkin. PUMPKIN EVERYTHING.

Don’t like pumpkin? That sucks because it’s going to be everywhere until December. For those of you (the majority of people I’m hoping) that DO like pumpkin…

How can you Pumpkinify your morning without the sugar-laden lattes? Let me help you.

Like coffee? Me too. But don’t spend $8000 on a special pumpkin spiced foamy milkshake-like beverage. Just pumpkinify your own! Add a shake of ground cinnamon, nutmeg, ginger and a couple of cloves (or pumpkin pie spice) into your coffee grounds before you brew your coffee. Your house will smell delicious and you’ll get your fix. Plus you’ll most likely save yourself a ton of calories.

Now that you have your coffee, let’s add some pumpkin to your breakfast, shall we? How about some Pumpkin Pie French Toast?20150920_071519


  • Whole grain bread, sliced thick20150920_070235
  • 2 eggs
  • 1/4 cup pureed pumpkin (canned or fresh)
  • 1/2 cup milk
  • 1/2 tsp pumpkin pie spice (I used Splendor Garden organic pumpkin pie spice! OMG YUM)
  • 1/2 tsp vanilla
  • 1/4 cup plain greek yogurt
  • 1 tbsp real maple syrup
  • Toppings! Pecans, pumpkin seeds and more maple syrup
Whisk together greek yogurt and maple syrup. Set aside. Whisk together the eggs, pumpkin, milk, spices and vanilla. Dip in bread and place on non-stick skillet. Cook over medium heat for a couple of minutes each side, until browned and egg is cooked through. Place on plate and top with maple yogurt, chopped pecans and pumpkin seeds. Devour.
Don’t forget about your delicious coffee!
And there you go. You have pumpkinified your morning.
