H: Honey and Hemp
I wish I could say that winter was coming to an end but it’s still really, really cold around here. We got some fresh snow today and although I like to be positive, we will not be looking at temperatures above zero for a few good weeks yet.
Double awesome if they taste good AND are good for you…am I right?
Honey is anti-bacterial and anti-fungal making it the perfect food for fighting off colds. It’s also an AWESOME cough suppressant for children OVER one and UNDER six (who are not allowed to have over-the-counter cough medications). Honey contains flavonoids which are antioxidants that could help prevent heart disease and some cancers. Hemp hearts (hulled hemp seeds) are chock full of omega-3 and omega-6 essential fatty acids that encourage heart health as well so get yourself some honey and make these superhero disease fighting muffins!
Honey and Hemp Muffins:
- 1 cup apple butter (or unsweetened applesauce)
- 1 egg
- 1/4 cup coconut oil, melted
- 1/2 cup honey
- 1 tsp vanilla
- 1 1/2 cups whole wheat flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp sea salt
- 1/4 cup hemp hearts + some for sprinkling
Mix together apple butter, egg, coconut oil, honey and vanilla. Set aside. In another bowl, whisk flour, baking powder, soda, salt and 1/4 cup hemp hearts. Mix the dry ingredients into the wet and mix just until combined.
Scoop into a greased mini muffin tin and sprinkle with more hemp hearts. Bake for 10-15 minutes until golden brown or until a toothpick poked in the middle comes out dry.
Makes 24 mini muffins.
Lasts for less than 24 hours if you share. Which I did. So now I have to go make more!
