I recently went downtown with my kids on a day off from school. The big box-store windows are all dressed up for Christmas with sparkles and bows…I love it!
As always, I’m about simplicity. These cookies are just that. Only six ingredients and one bowl. Simple, and delicious. And gluten-free, if you need that. Sometimes it’s nice to have the option. They also keep for weeks in the fridge and when they’re cold, they have an awesome shortbread-type thing going on. YES. PLEASE.
- 2 1/2 cups almond flour (I used JK Gourmet, it’s delicious)
- 1 cup oat flour (grind up some oats until fine)
- 1 cup coconut oil, melted and cooled
- 1/3 cup real maple syrup
- 1/2 tsp salt
- 1 tsp vanilla
- pomegranate arils (optional)
Leave in the fridge for 30 minutes to let the coconut oil set up.
Scoop by teaspoon onto parchment paper covered baking sheets. For perfect little circles, use a disher and slightly flatten. I topped mine with pomegranate arils but you could use whatever you want or leave them alone. They really don’t NEED anything, but I loved the little burst of fresh pomegranate. And it looks all pretty and festive.
Bake for 8-12 minutes, until the edges begin to brown. Let cool for about ten minutes.
